We begin with a proprietary blend of high protein flour, yeast, salt and sugar mixed to exacting specifications to create dough with the right texture and strength. Once it has been kneaded and allowed to ferment and rise three times it is baked in a specially created Panko oven, which uses electric current to cook the bread instead of heat. This process creates a fresh crust-less all white bread loaf with a long, airy bread cell structure. The perfect start in making the best Panko bread crumbs. The bread loaves are naturally dried a minimum of 18 hours and then passed through our grinding process using custom screens to create the long slivery crumb. The crumbs are quickly heat toasted to the perfect crispy texture.
