Gary has remained at the forefront of the business even through its acquisition in the mid 90s. In 2006, the breaded seafood operation left California, and Gary purchased Upper Crust Enterprises to continue the family dream of becoming a flourishing Japanese Panko manufacturer providing the best Panko bread crumbs to its customers.
The manufacturing plant still stands where it was originally built. To keep up with generations of growing technology, the plant has undergone numerous advancements, but still makes the Japanese Panko bread crumbs in the old world traditions of Japan. Upper Crust, a Panko bread crumb manufacturer, has mastered the art and science of breadcrumb making. We begin with a proprietary blend of high protein flour and yeast mixed to exacting specifications to create a dough with the right texture and strength. Once it has been kneaded and allowed to ferment and rise three times it is slow baked in a specially created Panko oven creating fresh crust-less bread loaf with long, airy bread cell structure. The perfect start in making the best Japanese Panko crumbs. The bread loaves are completely uniform in both color and texture which is essential to the quality of our Japanese bread crumbs. After naturally drying the bread a minimum of 18 hours we pass the bread through our grinding process using custom screens to create the long slivery crumb and then quickly heat dry the crumb to the perfect moisture level.
This combination guarantees our product will have the perfect crunch and crispiness for your signature recipes.
